Opened in March 2016, Taverna Italian Eatery was created to be Kapalua’s gathering place. A place where longtime residents, returning guests and first-time visitors could come together and relax and enjoy the beauty of Maui’s mountains and sea, and feed their bodies and spirits with Italian cuisine created from fresh ingredients by an innovative and renowned Chef.

Taverna Restaurant, home of Urban Drinks + Italian Eats, is pleased to announce the appointment of John Hearns as Managing Director/General Manager for the newly re-opened restaurant.
John will round out the management team to spearhead new initiatives and business operations. As a seasoned hospitality executive with over 15 years experience, John has an extensive background in food and beverage management, luxury hotels and resorts and restaurants from casual to fine dining.
John grew up in a hospitality family and has lived in many states across the mainland. He has spent most of his years on the coast or in beach communities and has an affinity and respect for the island lifestyle.
A graduate of Auburn University with a Bachelor of Science in Mathematics, John has combined his analytical skills and management experience to optimize the restaurant space. He moved to Maui to lead the Operational Excellence team at The Ritz-Carlton, Kapalua. Prior to moving to Maui, he worked for the Mandarin Oriental in Miami.
At Taverna, John will oversee the newly created Dolces by Taverna Coffee Bar & Bakery, and day-to-day operations of the award-winning restaurant. John is passionate about guest service and will bring his dedication to brand quality, experiential dining and customer engagement to the restaurant.
One of John’s biggest endeavors will be the construction of an outdoor lanai area which will include wood-fired pizza oven, rotisserie grill and large covered patio with sweeping views of the West Maui Mountains. Slated as an outdoor and group event venue, this will also allow the restaurant to expand its seating capability.
Let’s just say Chris knows Kapalua pretty well. He’s the former longtime managing partner for Pineapple Grill, and general manager/managing partner for Plantation House. With more than 30 years of restaurant management experience behind him, he tends to bring success wherever he goes. His understanding of the Kapalua Resort clientele and his ability to respond to trends in the industry led to the development and acclaim of these popular venues, and serves Taverna well.
Prior to his years at Kapalua Resort, Chris spent more than a decade with TS and Chart House Restaurants, managing multiple restaurants in both Hawai‘i and California. No matter the location, Chris understands the value of assembling a top-notch team that truly loves to make customers happy.
Born and raised in Kailua, O‘ahu, Chris brings plenty of aloha to his hands-on management style, and this positive vibe is reflected in the dedication and work ethic of the Taverna ‘ohana.
In his work and travels around the world, Chef Roger Stettler has excelled in many types of cuisine, from Korean to Caribbean. But to create the menu for Taverna Italian Eatery, he’s thrilled to return to his European heritage. Born in Bern, Switzerland, Chef Roger was inspired by his Italian mother and classically trained in French cooking. He earned a chef degree after completing the apprenticeship program at Switzerland’s prestigious Hotel Kulm Arosa and went on to serve as Executive Chef in five-star hotels in Thailand, Singapore and the Virgin Islands.
In 2004, the same year he was given his Certified Master Chef degree by the Swiss government, Chef Roger arrived on Maui. At the Four Seasons Resort Maui in Wailea, he launched a 10-year career as Executive Chef that brought him well-deserved recognition. In 2012, he was named “Chef of the Year” by Maui No Ka ‘Oi Magazine and given Maui Culinary Academy’s highest honor as a “Culinary Arts Ambassador” for his tireless work with students.
Chef Roger’s dedication to the community includes his goal to source local ingredients whenever possible. His homey Italian menu is a big part of why Taverna provides such a warm and welcoming environment for both Maui residents and visitors.
Taverna is open daily for dinner from 5:00 pm to close.
